Low coolant light

Any Idea why I keep getting a low coolant light on my dash? I replaced the sensor already and it still shows. The coolant is not low, and it does not run too hot either. Also, sometimes the light will go off for a period of time, and then come back. I never had an issue until I had my AC Compressor replaced.

Iím just going to take a stab at it and say they opened the radiator cap.
